I have been trying hard to eat healthier since finding out I'm pregnant. Of course, I keep getting told that I'm not supposed to be trying to eat to maintain weight, I'm supposed to gain weight. Blah, blah, blah. I'd rather know I'm feeding my baby good, nourishing food, rather than feeding myself crap that's going to make me gain weight. Right? Right.
So, starting this week, I made a weekly dinner plan. I figured out what I was going to cook each night, and I went to the store and I only bought the stuff to make each dinner. Here's what our eating week looks like...
Monday: Chile Rubbed Steaks w/Pan Salsa
Southwestern Salad
Tuesday: Sour Cream and Cheddar Chicken/Shrimp
White Rice
Green Beans
Wednesday: Ricotta and Spinach Manicotti
Caesar Salad
Thursday: Burritos Con Queso
Taco Rice
Refried Beans
Friday: Hot Dogs
Baked Potatoes
Saturday is Valentine's Day so we're going out, and Sunday is "leftover" day. Monday's dinner was okay except for the salsa, it was gross. Dinner tonight was really good. I can always tell when I've done well if my husband doesn't leave anything on his plate. Thanks to mom for a great recipe- one we'll be using again! Tomorrow night is pretty standard, I've helped my mom make it before plenty of times. Thursday I'm attempting to make burritos like my favorite Mexican place, so I'm going to make Chile Con Queso from scratch- using Emeril's recipe. Of course, I'm not a huge Emeril fan, but I figure the man knows his stuff. Friday is *TGIF* night, and we haven't had hot dogs in ages.
It's so rewarding to get into my kitchen and cook dinner every night. I really do enjoy cooking... My momma's a great cook, my Nana's a great cook... I figure I better get going on my own skills! I'm so my mother's daughter. I'd love for my baby to think I'm a good cook. I'd love for my husband to think I'm a good cook! My husband's a good cook, actually. It's kind of cute, because Zach lets me take the left overs and pack them into a piece of tupperware so that he can take them the next day for lunch. That just makes me smile. I at least know he's had a good meal!
So I had to share, because I'm rather proud. I think it's that whole nesting thing.
