single parenting weekend plans

Tomorrow, we're getting up early (and for Liam and I, really early) to bid adieu to Zach for a weekend. 
We've never actually been separated like this since Liam was born.

... anyway.

I'll be single parenting it for 3 days, and I started getting a little anxious about food. Why? Because I didn't want every meal to look like this:

Not that I don't love hot dogs, but you know. Let's not use daddy (the cook) not being home to eat trash all weekend. 

So yesterday morning I sat in front of my computer and tried to emulate Kate from elefantitas alegres. She might or might not be a kind of hero of mine. 
She also is incredibly clever in that every weekend she plans out meals for the week and that's that. So I planned out every. single. meal. until Sunday evening. 

So here's what we're going to be indulging in this weekend:

THURSDAY:
dinner: quick shrimp chowder

FRIDAY:
breakfast: cinnamon rolls
lunch: homemade pizza
dinner: pasta w/ Kate's roasted red pepper sauce, broccoli casserole

SATURDAY:
breakfast: cheerios w/ fruit
lunch: open-- parents will be here.
dinner: pan seared fish, green beans, cous cous

SUNDAY:
breakfast: biscuits and jam
lunch: macaroni and cheese, fruit
dinner: chili @ mom & dad's. 


I know, whoopee. 
But it's something. Zach is really, really, REALLY not into pasta. So I never have a chance to make it/eat it myself. So we're going to. And Liam has suddenly decided he likes fish? Yeah- the only meat he will eat right now is fish. So, go with it. 

I also might, or might not, be buying a couple of bottles of wine when I go to the store today. Why not? Liam will go down at night, I'll have nothing to do (realistically, I'll have picking up, cleaning, organizing...) so a few glasses of wine couldn't hurt. 
 Right?

Oh YEAH, and how could I forget my really good news!?
My DAD is coming home today for a long stay! He's not going back to Doha until after the new year, and I'm so excited about it! He's going to come over tomorrow morning and hang out with his favorite grandson while I get my house cleaned and whipped into shape. I am so, so, so, so excited to see him!

I've tried meal planning dozens of times and fail miserably. Mostly because I prefer eating out. I'm so bad. Maybe I'll try it this week and see how I do. Kevin would be thrilled if I made a menu, bought groceries and actually stuck to the plan. Sounds daunting.

And, HOORAY for your dad coming home. I don't think I know what he does/why he's there. Bad friend. Fill me in next time we're together. xoxo

Love your meal plan! I usually whip one up before I do grocery shopping because I find it highly annoying to go back to the store a million times a week. Sometimes we shift things around because I get in the mood for something else... but it usually works out!

So happy for you to have your dad back!! I'm assuming he's away for business reasons? Hope you guys have a great time together tomorrow!

That all sounds amazing! And yay for Grandpa Smalls being back! And double yay that he gets to be home for so long this time! Awesome blossom!!!! Oh and my aunt really really REALLY isn't into pasta, so when we make it at her house, she makes herself spaghetti squash or rice for the sauce :-). Just a thought for picky picky.

meal planning makes things SO much easier... if you can stick to it! it takes forethought and time.. both of which i have very little of!
